Method

 

  • In a kadai, add milk and grated carrots.
  • Keep the flame on low, bring the whole mixture to a boil, and then let it simmer.
  • Keep stirring in between.
  • The grated carrots will cook in the milk, and the milk should start to reduce and evaporate.
  • When that happens, add the ghee, jaggery powder, and powdered cardamom to the mixture.
  • Stir well, simmer and cook on a low flame.
  • Toward the end, add the cashews, almonds, saffron, and raisins. 
  • Let it simmer till all the milk has evaporated.
  • Once done, switch off the burner.
  • Serve it hot, warm, or cold, as per your choice. 
  • Garnish using some chopped dry fruits while serving.
