  • Rinse, peel, and grate the Bottle Gourd to a quantity of about 1 Cup.
  • Take a thick-bottomed pan and heat the oil. 
  • Once it is heated, add the Bottle Gourd.
  • Stir it well and sauté it on a low or medium heat for about 4 to 5 minutes.
  • Now, add the milk and stir.
  • On a low to medium heat, let the milk simmer while you keep stirring at intervals.
  • After about 5 to 6 minutes, add a pinch of saffron strands.
  • Then again, let the milk simmer until it starts to boil.
  • Once the milk reduces a bit, add the jaggery powder and stir well.
  • Next up, add the powdered green cardamom and cashews.
  • Let it all simmer for about 2 to 3 minutes more.
  • Serve it warm or chilled, but keep one thing in mind. If you cool it, the consistency of the kheer will thicken, which results in better taste and flavors.
