Ingredients

  • 2 Tbsp. Ghee 
  • 4 cups Grated Carrots
  • 1 cup Milk Powder 
  • ⅓ cup Sugar or as required
  • ½ Tsp. Dwaraka Organic Green Cardamom, powdered
  • Dry Fruits 
  • ½ Tsp. Ghee for greasing the pan, tray, or plate

Method

Preparing the Carrots:

  • Take about 550 grams of carrots and grate them.
  • Use a cup to measure exactly 4 cups of grated carrots.
  • Now take a pan or tray and grease some ghee and keep aside.

Making Carrot Barfi:

  • Take a kadai and add some ghee.
  • Once the ghee has melted, add the grated carrots and make sure to mix them all very well.
  • Now, keep stirring frequently on a low flame to sauté the carrots till they are cooked. 
  • Once done, add 1 cup of milk powder and mix it very well with the carrots.
  • After sauteing for about a minute or so, add the sugar and powdered green cardamom and mix it with the rest of the ingredients very well.
  • As the sugar melts, you will see that the mixture will begin to loosen up. 
  • Continue to sauté by stirring frequently on a low to medium flame.
  • Once the mixture thickens and starts to reduce, you should know that it is time to switch off the flame. 
  • Now you have to pour the entire mixture into the greased pan and smooth the top part using a spatula.
  • Sprinkle some dry fruits on top and press them very gently using the spatula on the halwa.
  • Cover and let the carrot barfi cool and settle down at room temperature. 
  • Once done, you can also keep it in the fridge for further cooling.
  • Finally, your Carrot Barfi is ready for serving.
