Method

  1. Rinse the rice through running water and soak it for about 20 minutes.
  2. In a pressure cooker, add sunflower oil on medium flame.
  3. When the oil is hot enough, add whole spices.
  4. Once the spices are lightly cooked, add the chopped onions and curry leaves. Saute until onions turn lightly golden.
  5. Now add the ginger garlic paste, green chillies, and chopped coriander leaves. Saute them until you don’t get the raw smell of ginger and garlic
  6. Add the beetroot to the cooker and saute it for a minute.
  7. Add turmeric powder, chilli powder, and coriander powder, and mix all the masalas well together. Let the mixture saute for about a minute.
  8. Add about 1.5 to 2 cups of water and the rice to the cooker.
  9. Season it with salt and mix the ingredients together in the cooker.
  10. Cover it with the cooker lid and let it cook for about 9-10 minutes or 2 whistles on medium flame.
  11. Once it’s cooked and the cooker is cooled down, you can transfer the dish into a serving bowl and garnish it with coriander leaves.
  12. Serve it hot with a side of veggie salad, raita, or pickle.
