Ingredients

For Kadai Masala:


Vegetables

  • 100 grams Carrots or ½ cup, cut into batons
  • 100 grams Potatoes or ½ cup, cut into batons
  • ⅔ cup Green Peas
  • 100 grams Capsicum, sliced
  • ⅓ cup Onions, sliced
  • 1 Tbsp. Oil


Other ingredients:

Method

  • Take a pan and in it, dry roast coriander seeds, cumin seeds, cloves, cardamom, cinnamon, dry red chillies, kasuri methi, cashews, and black pepper on low heat until fragrant. 
  • Once done, let it cool and grind to a fine powder, and keep aside.
  • Now, in a pan, you have to heat some oil and add sliced onions and capsicum, and sauté until the vegetables are partially cooked. 
  • Chop the potatoes and carrots, and keep both the half-cooked and uncooked veggies aside. 
  • In that same pan, add the remaining oil, heat it, and then add the ginger-garlic paste, and sauté until the raw aroma disappears. 
  • Next, add chopped onions and cook until light golden, and then add tomato puree, turmeric powder, and chilli powder. 
  • Cook well until the mixture thickens and the oil separates.
  • Now add carrots, potatoes, green peas, salt, and water. 
  • After that, cover the pan and cook until the vegetables are tender.
  • Once done, add the prepared kadai masala and the sautéed capsicum-onion mixture. Mix well and cook for a few minutes.
  • Stir in fresh cream, switch off the heat, and garnish with coriander leaves. 
  • Serve it hot with rice, parathas, or naans.
