Ingredients

Method

  • In a bowl, take the rice flour and chana besan.
  • Then add ajwain, cumin seeds, sesame seeds, turmeric powder, chili powder, asafoetida, and salt, and mix everything with a spoon.
  • In a small pan, heat some butter or oil and then add it to the flour mix.
  • Make sure to use a spoon to mix the butter or oil 
  • When it becomes warm, use your fingertips to combine. 
  • Once done, set it aside.
  • Now, in a saucepan, heat some water until it starts to boil.
  • Next, add this hot water in parts to the flour mixture and use a spoon to mix.
  • After that, use slightly damp hands and knead to a firm dough.
  • Once done, cover and let the dough rest for about 30 minutes.

 Making the Chaklis:

  • Use a chakli maker, put some water in it, and place a portion of the dough inside it.
  • Make sure to keep the lid tight and press the chakli maker with enough pressure to prepare the chakli. 
  • It is best to move in rounds in order to get the desired spiral shape. 
  • Also make sure to prepare the chakli on butter paper or aluminium foil, so it gets easy to remove them.

     Frying the Chaklis:

  • Take a frying pan and add some oil to it to heat. 
  • You can take out a considerably tiny piece from the dough and check the temperature of the oil.
  • Note that if the dough comes up gradually, then the oil is ready for use. But if the dough sits at the bottom, the oil is still cold. In addition to that, if the piece of dough comes up briskly and quickly, the oil is too hot. So you have to have the perfect balance.
  • Once the desired temperature of the oil is achieved, lift the chakli gently and slide it into the heated oil.
  • It is better to fry a maximum of 3 to 4 chaklis at a time so as to avoid overcrowding the pan while frying.
  • Make sure to fry the chaklis until they turn crisp and golden.
  • Once done, drain the chaklis on paper towels to remove extra oil.
  • Fry the remaining Chaklis in the same way. 
  • After you are done with frying, wait for the chaklis to come down to normal temperature so that they are ready to be stored in an airtight box or jar. 
  • Now your chaklis are ready to be served just as a standalone snack or with some hot beverage like tea or coffee.
