Ingredients

For Marination:

For Tempering:

  • 3 Tbsp. Onions, finely chopped
  • 2 to 3 Green Chilies, sliced diagonally
  • ½ Tsp. Ginger, finely chopped
  • ½ Tsp. Garlic, finely chopped
  • 6 to 7 Curry Leaves
  • 1 to 2 Dwaraka Organic Red Chili Whole Stemless, halved or broken, and seeds removed
  • ½ Tsp. Dwaraka Organic Mustard Seeds
  • 2 Tsp. Dwaraka Organic Sunflower Oil
  • 1 to 2 Tbsp. Coriander Leaves, chopped for garnish
  • Salt to taste

Method

Marination:

Take a bowl for mixing and add rice flour, chana besan, and corn flour.

  • Next up, add the green chili paste, ginger garlic paste, chili powder, garam masala, lemon juice, and salt.
  • Now, add water as required and whisk until it turns into a smooth paste. 
  • Then add the paneer cubes.
  • Now, gently mix the paneer cubes with the batter and make sure to cover and let it marinate for about 15 to 20 minutes at normal temperature.

Frying The Paneer:

  • Take a pan and heat some oil. 
  • Once done, make sure to coat the paneer cubes with the batter evenly and add them to the hot oil. 
  • Make sure to spread out the paneer cubes to maintain space between them to avoid sticking.
  • Fry both sides of the paneer cubes evenly till they become golden and crispy.
  • Once done, put the fried paneer cubes on kitchen paper towels to drain out the excess oil.

Preparing Paneer 65:

  • In the same pan where you fried the paneer cubes, heat some oil on a medium-low flame.
  • Now you have to add the mustard seeds and wait for them to crackle.
  • Once the seeds crackle, go ahead and add the chopped ginger, chopped garlic, chopped green chilies, red chilies, and curry leaves. 
  • Keep stirring and mix very well.
  • After that, add the chopped onions, stir, and sauté till they soften.
  • Add salt and keep stirring to combine well. 
  • Next up, add the fried paneer cubes and mix and toss them with the rest of the ingredients. 
  • Keep tasting as you go on, to check if you need to add more salt.
  • Once you are satisfied, turn off the heat and add the chopped coriander leaves to garnish. 
  • Finally, serve the Paneer 65 hot as a starter with a chutney or dip of your choice.
