Method

Preparation:

  • First of all, take the okras and rinse them thoroughly in water a few times.
  • Then wipe them dry using a kitchen napkin and trim the crown and the base tip.
  • After that, make vertical slices of each okra into 4 pieces.
  • If the size of the okra is small, then you may slice it into 2 pieces. 
  • Once done, put all the sliced okra in a big plate or a bowl and sprinkle all the spice powders one by one.
  • After that, season with salt as per your taste.
  • Now use a spoon or a spatula and mix the spice powders with the okra in a gentle way.
  • Next up, sprinkle the chana besan on the okra.
  • After that, again mix the besan with the okra. And make sure that the besan and the ingredients evenly coat the okra slices.
  • Marinate the okra in this mixture for about 30 minutes. 

 

Making the Fried Okra:

  • Take a kadai or a frying pan, and heat about 2 to 3 Tbsp. oil. 
  • Once the oil heats up, add a batch of the marinated okra and fry. 
  • Make sure to fry the okras on medium heat until they turn golden brown and crisp. 
  • Once done, keep the fried okra on a kitchen towel so as to drain out the extra oil.
  • Serve the Fried Okra directly as they are, or if you want, you could garnish the dish with coriander leaves or sliced green chilis.
