Ingredients

For Poha:
  •  1 ½ cups Poha
  •  1 Medium-sized Onion
  •  2 Green Chillies
  •  1 Small Potato
  •  A small bunch of Coriander Leaves
  •  4 qts Curry Leaves
  •  ½ tsp Sugar
  •  Salt to taste
Ingredients For Tempering

Method

For Poha:
1.Rinse the Poha or flattened rice in clean water and drain the water completely. Repeat if required and set the bowl aside. This step must be done quickly to prevent the Poha from getting soggy.
2.Finely chop the onion, green chillies, and coriander leaves. Rinse the curry leaves. Dice the potatoes into medium-sized pieces and soak them in water.
3.To the rinsed Poha, add some salt and sugar as per taste and set it aside.
For Tempering
4.Heat a pan and add ½ tbsp oil. Add the peanuts and fry until golden and set them aside to cool.
5.In the same pan, add 1 tbsp oil and let it heat. Once heated, add the black mustard seeds and cumin seeds and let them splutter.
6.Add the chopped onion, green chillies, and curry leaves.
7.Sauté until the onions turn translucent. Then add the drained potato cubes and sauté for 2-3 minutes.
8.Cover the pan with a lid to let the potatoes soften. Keep the flame low.
9.Once your potatoes are fully cooked, take the lid off, and add some turmeric to the mix.
10.Add the seasoned Poha and mix well until it turns bright yellow.
11.Cover it with a lid and let the Poha cook on a low flame while stirring occasionally.
12.Once cooked, add some lime juice to the Poha.
13.Finally, top it off with the chopped coriander leaves, fried peanuts, and coconut shreds. Your refreshing Poha is ready to be served!
