Basics:
 3 cups Long-Grained Basmati Rice soaked and cooked
 ¼ tsp Saffron Strands
 1 tsp Green Chillies finely chopped
 ½ tsp Caraway Seeds
 1 Bayleaf
 ½ cup Onions sliced
 ¼ cup Cauliflower Florets blanched
 ¾ cup Green Peas boiled
 2 tbsp Pineapple chopped and canned
 2 tbsp Paneer Cubes
 2 tbsp Ghee
 Salt as per taste.
For the Garnish:
 1 tbsp Cashews fried
 1 tbsp Raisins fried
Method:

Take a bowl and mix the Saffron Strands in 1 Tbsp. warm water and keep aside.

Heat some ghee in a non-stick pan and add the whole spices with green chillies.

Saute them for a short while on medium flame.

Add the onions and saute them for a few minutes until they turn light brown.

Once done, add the Paneer Cubes, Cauliflower Florets, Turmeric Powder, Chilli Powder, and Green Peas.

Keep the flame on medium and saute them for a minute or two.

Finally, add the Rice, chopped Pineapple, Saffron water, and Salt.

Let it cook on a medium flame for two to three minutes and stir occasionally.

Once done, garnish it with Coriander, Raisins, and Cashews.

Serve it immediately because this Shahi Pulao is enjoyed piping hot with some chutney, raita, or curry.
