Ingredients

For the Soya Chunks:

  • 1 Cup Soya Chunks
  • 3 Cups Water
  • 1 pinch salt

 

For the Curry:

Method

Preparing the Soya Chunks:

  • First, take the Soya chunks, rinse them 2 to 3 times in water, and drain all the water.
  • Next, add 3 cups water and a pinch of salt to a pan, then add the Soya Chunks. 
  • After the water reaches boiling point, let it boil for about 5 minutes.
  • Once done, drain the water and rinse very well once again with fresh water. 
  • Then, press and squeeze the Soya chunks to remove all the extra water absorbed and set aside.

 

Preparing Curry:

  • Take a pan, heat 3 Tbsp oil, and keep the heat to medium-low or medium. 
  • Once the oil heats up, add 1 cup of finely chopped onions and sauté in the oil.
  • Keep sautéing until the onions turn golden. 
  • Add 1 Tsp. Ginger-garlic paste to the pan along with the caramelized onions.
  • Mix and sauté for a few seconds on low heat until the raw aroma disappears.
  • Next up, add ½ cup finely chopped tomatoes. 
  • Now sauté until the tomatoes turn soft and become pulpy. Let the excess oil release from the sides.
  • Add the ground spices and sauté for a few minutes on low heat. 
  • Once done, add the Soya chunks with 2 Tbsp. chopped coriander and 1 Tbsp. chopped mint leaves.
  • Mix very well and add salt as per taste.
  • Then add 1 cup water, mix well, and let it cook.
  • Once about 10 minutes have passed, check the consistency as per your preference and serve the delicious Soya Chunks Curry, which will be ready for serving.
