Amaranth Crackers

Do you wish to enjoy guilt-free snacking? Then you must try these crisp, melt-in-the-mouth Amaranth Crackers. 

Ingredients

  • 1 cup Dwaraka Organic Amaranth Flour
  • 3 tbs olive oil
  • 3 tbs water
  • ½ tsp baking powder
  • 1 clove of garlic, grated
  • 6 leaf sprigs of thyme 
  • 1 tbs fresh rosemary leaves
  • ½ tsp salt

 

Method

  • Preheat the oven to 180 celsius (355 Fahrenheit). 
  • Mix all the ingredients in a food processor to form a crumbly dough.
  • Remove the dough from the food processor and place it on a piece of baking paper. Knead it gently until smooth.
  • Flatten the dough and place another piece of baking paper on top. 
  • Roll out the dough using a rolling pin to a thickness of 5mm. 
  • Use a cookie cutter to cut out the cookies and place them on a baking tray lined with baking paper. 
  • Gently prick all over the crackers with a fork to prevent them from puffing up while baking. 
  • Bake them for 12 to 15 minutes, or until golden around the edges. 
  • Place them on a cooling rack to cool completely. Store them in an air-tight container. 
  • Enjoy with your favorite dipping sauce.
Amaranth Aloo Tikki

Ingredients

 

Method

  • In a mixing bowl, add all ingredients except oil. Mash the potatoes and mix all ingredients for the tikki to make a dough-like consistency.
  • Take a handful of dough in hand, make a roll, and press it in between the palms to give the tikki a circular disc shape. 
  • Repeat the same procedure for the remaining dough and make small disc-shaped tikkis. 
  • Heat oil in a heavy-bottomed skillet, add 3-4 tikkis at a time and cook it on medium heat until crisp golden brown on both sides.
  • Once done, drain the tikkis on paper towels and serve warm with mint chutney or ketchup.

Ingredients

  • 1/2 cup Dwaraka Organic Amaranth Flour
  • 1/2 cup Dwaraka Organic Jaggery Powder
  • 1/2 cup Ghee, melted
  • 1/2 tsp Cardamom Powder 
  • 1/4 cup Cashews, halved

 

Method

  • Dry roast the flour in a heavy-bottomed pan till the color changes to a light golden brown. Remove from the flame and set aside.
  • Grease a flat plate with ghee and keep aside.
  • Roast the halved cashew nuts in a bit of ghee until crisp and golden brown.
  • Now, combine the jaggery and 1/4 cup water in a heavy-bottomed pan and place over low heat until you get a nice syrupy consistency. 
  • To the jaggery syrup, add the roasted flour, powdered cardamom, and mix well.
  • Keep stirring continuously. 
  • When the mixture starts leaving the sides and bottom of the pan, turn off the heat. 
  • Pour this mixture immediately onto the greased tray and spread it evenly for it to set.
  • Sprinkle the roasted cashew nuts on top and press gently while the mixture is still hot.
  • Allow the mixture to cool and then cut into desired sizes and shapes. 
  • Serve it at room temperature or warm.

This combination of gluten-free flour and cottage cheese protein makes for a healthy breakfast or a scrumptious option at the time of fasting. 

Ingredients

 

Method

  • Mix all the ingredients in a mixing bowl with enough water to make a dough.
  • Divide the dough into equal portions and roll it onto a rolling board.
  • Heat a flat-bottomed pan and add the rolled paratha with some oil 
  • Cook it on both sides for about 2 minutes.
  • Serve your crispy parathas with your favorite chutney or curd.

Yes, you read it right! Now eat pancakes to your heart’s content without worrying about the gluten intake from maida flour. 

Ingredients

  • 2 large Bananas, mashed
  • 1 1/4 cups Almond Milk
  • 3 tbsp Vegetable Oil
  • 1 1/2 cups Dwaraka Organic Amaranth Flour
  • 3/4 tsp salt
  • 2 tsp Baking Powder
  • 2 tbsp Dwaraka Organic Jaggery Powder

 

Method

  • Beat the mashed bananas and milk until light and foamy. Stir in vegetable oil.
  • Whisk the dry ingredients together to evenly distribute the salt, baking powder, and jaggery powder.
  • Gently and quickly mix into the milk mixture. Let the batter rest for at least 15 minutes. 
  • Heat a heavy frying pan over medium heat. Lightly grease frying pan. 
  • Drop 1/4 cupfuls of batter onto the pan. Cook on one side until bubbles begin to form and break. 
  • Turn the pancake and cook the other side until brown. 
  • Drizzle with honey or maple syrup and serve hot with fresh berries and cream.
